  • 1/2 tsp salt
  • 1 tsp ground cinnamon

Wet Ingredients

  • 3 medium ripe bananas mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 1 large egg

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • In a large bowl, mash the bananas. Add the sugars, melted butter, vanilla extract, and egg. Mix until well combined.
  • Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  • Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a nuttier flavor and added fiber, substitute Hard Red Spring Wheat Flour (http://earlybirdnc.com/product/hard-red-spring-wheat-flour/). Note: This will make the bread denser, so you may also consider using a mix of whole wheat and all-purpose flour. Add nuts or chocolate chips for extra flavor, and store in an airtight container for up to 3 days.
