  • 1/2 tsp smoked paprika optional
  • 1/4 cup heavy cream optional, for extra richness

Instructions
 

  • In a medium saucepan, bring 4 cups of water (or milk and water mixture) to a gentle boil.
  • Slowly whisk in the Kentucky Blue Corn Grits, stirring constantly to prevent clumping.
  • Reduce heat to low and let the grits simmer, stirring frequently, for about 20–25 minutes until thick and creamy.
  • Stir in the salt, butter, and black pepper. If using, add the smoked paprika for a subtle smoky flavor.
  • Remove from heat and fold in the shredded aged cheddar cheese until fully melted and smooth.
  • For extra richness, stir in the heavy cream before serving.
  • Serve warm and enjoy as a side dish or a hearty meal on its own.

Notes

For a thinner consistency, add more liquid as needed while cooking. Try topping with crispy bacon, scallions, or a fried egg for a delicious variation. Store leftovers in an airtight container and reheat with a splash of milk or water to restore creaminess.
