  • 4 cups water or broth Chicken or vegetable broth for more flavor
  • 1 tsp salt Adjust to taste
  • 2 tbsp unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream or whole milk For extra creaminess
  • Freshly ground black pepper To taste
  • Fresh herbs Thyme or parsley for garnish (optional)

Instructions
 

  • In a medium saucepan, bring the water or broth to a boil. Add the salt.
  • Gradually whisk in the Pioneer White Corn Polenta, stirring constantly to prevent lumps.
  • Reduce the heat to low and continue stirring frequently for about 20-25 minutes, or until the polenta thickens and pulls away from the sides of the pan.
  • Stir in the butter, Parmesan cheese, and heavy cream (or milk). Continue stirring until everything is well incorporated and creamy.
  • Add black pepper to taste and garnish with fresh herbs if desired. Serve warm as a side dish or as a base for roasted vegetables, meats, or sauces.

Notes

For a richer flavor, substitute half the water with milk or broth. Leftover polenta can be spread into a dish, cooled, then sliced and pan-fried for a crispy variation.
