Ingredients
  

Dry Ingredients

  • 2 cups Organic All-Purpose Flour Early Bird Farm & Mill
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon optional

Wet Ingredients

  • 2 ripe bananas mashed
  • 0.5 cup plain yogurt or sour cream
  • 2 large eggs
  • 0.5 cup sugar
  • 0.25 cup neutral oil e.g., canola
  • 1 tsp vanilla extract

Add-ins (Optional)

  • 0.5 cup chopped walnuts or chocolate chips

Instructions
 

  • Add all wet ingredients to the bread machine pan according to the manufacturer’s recommended order.
  • Top with dry ingredients. Select the 'Quick Bread' or 'Cake' cycle.
  • Scrape down the sides of the pan after a few minutes of mixing if needed.
  • When the baking cycle is complete, remove the bread pan and let cool for 10 minutes. Then transfer the loaf to a wire rack.

Notes

Try adding a tablespoon of espresso powder to enhance the banana flavor. For a vegan version, use plant-based yogurt and flax eggs.
